Parangipettai Anchovies kurma

Ingredients
Anchovies ¼ kg
Onion 1
Curry leaf 4 sprigs
Tomato 2
Green chilli 2
Tamarind extract 1 cup
Turmeric powder ½ tsp
Coconut grated ½ cup
Peppercorns 2 tsp
Cumin seeds 1 tsp
Fenugreek seeds ½ tsp
Dry red chilli 6
Coriander seeds 3 tsp
Garlic 4 pods
Mustard seeds ½ tsp
Salt and oil as required
Preparation
1.      Dry roast coconut,garlic,pepper corns,cumin seeds,fenugreek seeds,dry red chilli,coriander seeds and grind it to a smooth paste by adding little water
2.      Grind onion and curry leaf to a fine paste
3.      In a pan add oil,mustard seeds,onion curry leaf paste,tomatoes and slit green chilli.saute well
4.      Add coconut paste,turmeric powder,tamarind extract and salt
5.       If needed add required water to make your desired consistency
6.      Once it starts boiling add anchovies and cook till it is done
Serve with rice,goes well with idlis

Parangipettai crab curry


Ingredients
crab 5
onion chopped 2
ginger garlic paste 2 tsp
green chilli 3
tomato chopped 2
turmeric powder ½ tsp
chilli powder  1 tsp
pepper powder 2tsp
coconut paste ¼ cup
mustard seeds ½ tsp
urad dal ½ tsp
oil and salt as required
preparation
1.In a pan add oil,mustard seeds,urad dal,onion and ginger garlic paste.saute well
2.Add tomatoes,green chilli and crab.saute it well
3.Add turmeric powder,chilli powder,pepper powder ,salt and water
4.Once it starts boiling add coconut paste
5.Cook till done
Serve with rice

Parangipettai Prawn gravy


Ingredients
Prawns cleaned 200 gms
Onion chopped 1
Ginger 1 inch
Garlic 5 pods
Tomato 2
Cumin seeds 1 tsp
Pepper corns 1 tsp
Coriander seeds 1 tsp
Coconut ¼ cup
Turmeric powder ½ tsp
Salt and oil as required
Preparation
1.      In a pan add oil,cumin seeds,pepper corns,coriander seeds,ginger,garlic and coconut.roast and grind it to a fine paste  by adding water
2.      In a pan add oil,cumin seeds,curry leaves and onion.saute well
3.      Add tomatoes and cook till it blends well
4.      Add the ground paste,turmeric  powder and prawns.saute well
5.      Add little water and salt
6.      Cook till the prawn is done
serve with chapathi or rice

cuddalore prawn curry


Ingredients
Prawn cleaned 300 gms
Coarsely ground fennel seeds 1 tsp
Onion chopped 1
Tomato 1
Ginger garlic paste 1 tsp
Green chilli 2
Chilli powder 1 tsp
Garam masala ½ tsp
Coriander powder 2 tsp
Curry leaf and coriander leaves chopped 2 tbsp
Salt and oil as required
Preparation
1.      In a pan add oil,ground fennel seeds,onion, slit green chillies and ginger garlic paste.saute well
2.      Add chilli powder,tomatoes and saute well
3.      Add salt,coriander powder and garam masala.toss well
4.      Add little water about 2 tbsp and add cleaned prawns
5.      Cook till prawn is done
6.      Finally add coriander and curry leaves .toss once and turn off the flame
Serve with rice or briyani

Pondy Scrambled dried seer fish(vanjiram karuvadu thokku)


Ingredients
Dried seer fish 100 gms
Onion chopped 1cup
Green chilli chopped 4
Ginger chopped 1 inch
Garlic chopped 15 pods
Curry leaves 2 sprigs
Coriander leaves chopped 2 tbsp
Chilli powder 1 tsp
Turmeric powder  ½  tsp
Mustard seeds ½ tsp
Urad dal ½ tsp
Salt and oil as required
Preparation
1.      Soak the dried fish in hot water for 10 minutes and clean it well
2.      Cut it into small cubes
3.      In a pan add oil,mustard seeds, urad dal,onions,ginger, garlic and curry leaves.saute well
4.      Add turmeric powder,chilli powder and green chillies.saute it
5.      Add the dried fish pieces and ¼ cup water
6.      Allow it to cook
7.      Once cooked check for salt
8.      If required add salt
9.      Finally add coriander leaves.toss once
Serve with rice.goes well with rasam rice

Cuddalore Fish cutlet


Ingredients
Shark Fish ½ kg
Onion chopped 1
Potato boiled and mashed 200 Gms
Green chilli chopped 3
Bread crumbs ½ cup
Turmeric powder ½ tsp
Coriander mint leaves chopped 3 tbsp
Mustard seeds ½ tsp
Fennel seeds 1 tsp
Oil and salt as required
Preparation
1.      In a pan add water ,bring it to boil
2.      To it add fish, turmeric powder and salt
3.      Once cooked, drain water and mash it. Keep aside
4.      In a pan add oil,mustard seeds,fennel seeds,onion,green chilli,mint coriander leaves and salt
5.      Sauté it and keep aside
6.      In a bowl add mashed potatoes, mashed fish and sautéed .mix well and make balls of it
7.      Coat it with bread crumbs and deep fry it in oil
Serve with mint chutney or coriander chutney

Neyveli Red Snapper Fish Curry( Sankara Meen Kulambu)


Ingredients
Fish  350 gms
Onion 1
Tomatoes 2
Garlic 10 pods
Coconut 1 cup grated
Sambar powder 2 tbsp
Turmeric powder ¼ tsp
Tamarind extract  2 cups
Curry leaf 1 sprig
Salt and oil as required
Preparation
1.      Clean the fish pieces and marinate it with turmeric powder,salt and a little oil for 15 minutes
2.      Grind coconut,garlic and onion to a fine paste and keep aside
3.      In a pan add oil and fry the fish pieces for  10 seconds and keep aside
4.      In the remainig oil add curry leaves and tomatoes
5.      Saute well till it blends
6.      Add tamarind extract,sambar powder,salt and required water
7.      Once it starts boiling add fish pieces and cook till it is done
8.      Finally add coconut paste and cook till oil oozes out
Turn off the flame and close the lid
Serve with rice after 2-3 hrs for  better taste
Goes well with idli or dosa(kal dosa)

Puduvai fish curry


Ingredients
Pomfret fish(small whole fish pieces) 5
Onion chopped 1
Tomato 1
Garlic 10 pods
Fennel seeds 1 tsp
Fenugreek 1 tsp
Coconut grated ¼ cup
Curry leaf 1 sprig
Tamarind extrac t 1 cup
Curry powder  2 tsp
Coriander 2 tsp
Salt and oil as required
Preparation
1.      Remove head and tail from the fish .wash it and keep aside
2.      Grind grated coconut ,tomato,curry powder,coriander powder and salt with little water to smooth paste
3.      In a pan add oil,fennel seeds,fenugrek seeds,chopped onion,garlic and curry leaves.saute till onions are translucent
4.      Add the ground paste,tamarind extract and required water.bring to boil
5.      Once it starts boiling add fish and cook till the fish is done
                  Serve with rice or parathas

Puduvai Scrambled prawn fry (eral puttu)


Ingredients
Prawns cleaned 300 gms
Onion chopped 1 cup
Ginger garlic paste 1 tbsp
Green chillies chopped 4
Fennel seeds 1 tsp
Curry leaf 1 sprig
Turmeric powder ½ tsp
Salt and oil as required
Preparation
1.      In a pan add oil, cleaned prawns, turmeric powder and salt
2.      Cook for 5 minutes
3.      Allow it to cool and grind it coarsely
4.      In a pan add oil, fennel seeds, ginger garlic paste,onions,green chillies and curry leaves, sauté it
5.      Add the ground prawns and salt
6.      Toss well
Serve with rice

Puduvai Fish kofta briyani (Puduvai meen briyani)


Ingredients
Basmati rice 1 cup
Boneless fish (seer) ½ kg
Onion 2
Tomato 1
Green chilli 6
Ginger garlic paste 2 tsp
Turmeric powder ¼ tsp
Corn flour 1 tbsp
Cinnamon 1
Cardamom 1
Cloves 2
Bay leaf 1
Coriander and mint leaves 2 tbsp each
Oil and salt as required
Preparations
1.      Clean the fish pieces and cook it and smash it nicely
2.      To it add one chopped onion,2 chopped green chilli,1 tsp,ginger  garlic paste, corn flour and salt.
3.      Mix coriander leaves and make small balls of this dough
4.      Fry the balls in oil and keep aside
5.      In a broad vessel add oil, cinnamon, cloves, cardamom, bay leaf and 1 onion. sauté it
6.      Then add 4 slit green chillies, 1 tsp ginger garlic paste and tomato. sauté it
7.      Add  turmeric powder ,salt and washed rice.fry it for 2-3 minutes and add 2 cups of water
8.      When the rice is half cooked, add fried fish balls and close the lid
Once the rice is done, garnish with mint leaves and serve hot
