Kongu tomato chicken


Ingredients
Chicken 500 gms
Onion 2
Tomato 3
Garlic 10 pods
Ginger 1 inch
Cumin seeds 1 tsp
Pepper corns 1 tsp
Dry red chilli 4-6
Fennel seeds 1 tsp
Curry leaf 2 sprigs
Turmeric powder
Salt and oil as required
Preparation
1.      Grind 1 onion, tomato,ginger, garlic, pepper, cumin and dry red chilli into paste
2.      In a pan add oil, fennel seeds, curry leaf and chicken
3.      Saute till it oozes out water
4.      Add salt and turmeric powder
5.      Once the water dries up, add ground paste and ½ cup of water
6.      Allow to cook till done
Serve with rice
Goes well with indian breads

Erode ghee chicken(nei kozhi)


Ingredients
Chicken ¼ kg
Turmeric powder 1 tsp
Ghee 2 tbsp
Salt as required
For masala
Pepper corns 1 tsp
Cumin seeds 1 tsp
Dry red chilli 12
Smallonion 15
Ginger garlic paste 2 tsp
Ghee 3 tbsp
Curry leaves 4 sprigs
Preparation
1.      In a pan add ghee, pepper corns, cumin seeds, curry leaves, dry red chilli, small onion and ginger garlic paste.
2.      Saute well and allow it to cool
3.      Grind it to a paste. Keep aside
4.      In a pan add ghee, chicken, turmeric powder ,curry leaf and salt. Saute well
5.      Add ground paste and ¼ cup of water to it
6.      Cook till done
7.      Serve hot

Mallur chicken fry


Ingredients
Chicken 500 gms
Small onion chopped 20
Dry red chilli 6
Ginger garlicpaste 2 tsp
Fennel seeds ½ tsp
Bay leaf 1
Cinnamon 1
Coriander powder 2 tsp
Salt and oil as required
Preparation
1.      In a pan add oil, cinnamon, fennel seeds, bay leaf , small onion, dry red chilli and ginger garlic paste
2.      Sauté till the oil gets the red colour of the chilli
3.      Add chicken and salt
4.      Add 2 tbsp of water
5.      Sauté till the chicken is done
6.      Finally add coriander powder and toss well
Serve with rice

Bavani egg chicken mix( muttai kozhi kootu)


Ingredients
Chicken ¼ kg
Egg 4
Onion 2
Green chilli 2
Tomato 1
Ginger garlic paste 1 tsp
Ginger chopped 1 tsp
Garlic chopped 1 tsp
Turmeric powder ½ tsp
Chilli powder 1 tsp
Cinnamon 1
Cloves 2
Curry leaf 2 sprigs
Coriander leaves chopped 2 tbsp
Oil and salt as required
Preparation
1.      In a pan add a cup of water,to it add chicken,turmeric powder,chilli powder,ginger garlic paste  and salt
2.      Cook till chicken is done and dries up well
3.      In a pan deep fry the cooked chicken in oil and keep aside
4.      In a pan add oil,cinnamon,cloves,onion,green chilli,ginger ,garlic and tomato.saute well
5.      Add salt,coriander leaves,curry leaf,egg and fried chicken
6.      Toss well till egg coats well with chicken
Serve with rice

Bavani country chicken watery curry(naatu kozhi thanni kulambu)


Ingredients
Chicken 500 gms
Onion 1
Green chilli 2
Curry leaf 2 sprigs
Ginger garlic paste 1 tsp
Tomato 1
Cinnamon 1
Cloves 2
Turmeric paste ½ tsp
Chilli powder 1 tsp
Salt and oil as required
To grind
Small onion 15
Garlic 10
Ginger 1 inch
Peppercorns 1 tbsp
Cumin seeds 1 tsp
Cinnamon 1
Cloves 2
Fennel seeds 1 tsp
Curry  leaves 2 sprigs
Coriander powder 1 tbsp
Roast the above ingredients in a tsp of oil and ground to a fine paste without adding water
Preparation
1.     In a pan add oil,cinnamon,cloves,onion,green chilli,curry leaf,ginger garlic paste and tomato.sautewell
2.     Add chicken and sauté till water oozes out well
3.     Add turmeric powder,chilli powder,salt and 2 cups of water
4.     Cook till the chicken is done
5.     Add ground paste and allow it to boil
Serve with idli,dosa or rice

Nilgiri mutton kurma


Ingredients
Mutton 500 gms
Fennel seeds 1 tsp
Green chilli 2
Onion 1
Tomato 2
Turmeric powder ½ tsp
Coriander powder 2 tsp
Garam masala  1 tsp
Coriander leaves chopped 1 cup
Mint leaves chopped 1 cup
Curry leaf 2 sprigs
Lemon juice 2 tsp
Salt and oil as required
To grind :1
Coriander leaves 1 cup
Mint leaves 1 cup
Green chilli 4
Garlic 10
Ginger 1 inch piece
Grind to a fine paste
To grind :2
Coconut grated ½ cup
Poppy seeds 2 tsp(soak in warm water for 15 min before grinding)
Grind to a smooth paste
Preparation
1.     In a pressure cooker add oil,fennel seeds,onion,slit green chillies and curry leaves
2.     Add tomato,turmeric powder,coriander powder and salt
3.     Add chopped mint-coriander leaves.
4.     Add mutton pieces and sauté well
5.     Add 4 cups of water to it and pressure cook for 5-6 whistles
6.     Allow it to cool
7.     Then add the ground paste 1.
8.     When it starts boiling add coconut paste and garam masala
9.     When it starts boiling,turn off the flame and add lemon juice
Serve with briyani,rice or rotis

Salem Chicken rasam


Ingredients
Chicken with bones ¼ kg
Onion 1
Tomato 1
Ginger garlic paste 1 tsp
Green chilli 4
Turmeric powder ½ tsp
Chilli powder 1 tsp
Coriander powder 1 tsp
Pepper powder 1 tsp
Coriander leaves 2 tbsp
Cinnamon 1
Cloves 2
Bay leaf 1
Oil and salt as required
Preparation
1.      In a pressure cooker add oil,cinnamon,cloves,bay leaf,onion,ginger garlic paste and green chilli.saute well
2.      Add chicken and saute till water oozes out of it
3.      Add tomato,turmeric powder,chilli powder,coriander powder,pepper powder and salt.toss well
4.      Add coriander leaves,3 cups of water and pressure cook till 5 whistles
Serve with rice

Salem Minced chicken& liver dry curry(kozhi eral thokku)


Ingredients
Chicken minced ¼ kg
Chicken liver ¼ kg
Onion chopped 1
Green chilli 2
Ginger garlic paste 2 tsp
Tomato puree ¼ cup
Chilli powder 1 tsp
Coriander powder 1 tsp
Turmeric powder ½ tsp
Garam masala 1 tsp
Fennel seeds 1 tsp
Curry leaf 1 sprig
Oil and salt as required
Preparation
1.      In a pan add oil ,fennel seeds,curry leaf,onion,green chilli and ginger garlic paste
2.      Saute it and add chilli powder,turmeric powder,coriander powder and salt
3.      Add tomato puree and allow it to boil
4.      Once it starts boiling add minced chicken and liver pieces
5.      Add little water and cook till the chicken is done
6.      Finally add garam masala and allow it to boil
7.      Cook till it dries up
Serve with rice,chapathi…

Erode Chicken chintamani


Ingredients
Chicken 500 gms
Small onion 250 gms
Dry red chilli 15-20
Turmeric powder ½ tsp
Salt and oil as required
Preparation
1.      In a pan add oil and chopped onions.saute well
2.      Add split dry red chillies and saute till oil turns colour
3.      Add chicken pieces,salt and turmeric powder
4.      Cook till the cicken is done
5.      Do not add water,chicken should get cooked in oil itself
Serve with rice

gudalur chicken kohlrabi kurma


Ingredients
Chicken 250 gms
Kohl rabi (noolkol) 250 gms
Coconut grated ½ cup
Fennel seeds 1 tsp
Green chilli 5
Onion 1
Coriander powder 3 tsp
Turmeric powder ¼ tsp
Ginger garlic paste 2 tsp
Coriander leaves chopped 1 tbsp
Curry leaf 1 sprig
Fennel seed for seasoning
Oil and salt as required
Preparation
1.      Grind coconut,green chilli and fennel seeds to a fine paste by adding water
2.      In a pan add oil,fennel seeds,curry leaf ,onion and ginger garlic paste.saute well
3.      Add chicken and noolkol.saute well
4.      Add salt,turmeric powder and coriander powder.mix well
5.      Add water and allow the chicken to cook
6.      Once chicken is done add coconut paste and bring it to boil
7.      Finally add coriander leaves and turn off the flame
Serve with rotis or pulao

salem mutton dry fry(salem mutton sukka)


Ingredients
Mutton 250 gms
Onion chopped 1
Tomato chopped 2
Ginger garlic paste 3 tsp
Cumin powder 1 tsp
Turmeric powder ½ tsp
Chilli powder 1 tsp
Green chilli coarsely ground 3
Pepper powder 1 tsp
Salt and oil as required
Preparation
1.     Pressure cook mutton pieces with ginger garlic paste,turmeric powder and salt
2.     In a pan add oil,cloves,bay leaf and onion.saute well
3.     Add tomatoes and allow it to blend
4.     Add cumin powder,chilli powder ,salt and cooked meat
5.     Once it dries up add green chilli and pepper powder.toss once
Serve with rotis or pulao
