Mangalore Chicken curry (chicken curry with radish)


Ingredients
Chicken 500 gms
White radish cut into cubes 1 cup
Onion chopped 1
Tomato chopped 2
Gingergarlic paste 2 tbsp
Fennel seeds 1 tsp
Curry leaf 2 sprigs
Cloves 3
Cinnamon 1 inch
Chilli powder 1 tsp
Coriander powder 2 tsp
Fennel powder 1 tsp
Cumin powder 1 tsp
Garam masala 1 tsp
Turmeric powder ½ tsp
Salt and oil as required
Preparation
1.      In a pan add oil, fennel seeds, cloves,cinnamon,curryleaf and onion. Saute well
2.      Add gingergarlic paste and chicken.saute till it oozes out its water
3.      Add radish and tomato.saute once
4.      Add turmeric powder and salt
5.      Toss well
6.      Add ½ cup of water and allow to cook
7.      Once cooked add chilli powder,coriander powder,garam masala,fennel powder and cumin powder
8.      Add about a cup of water and bring it to boil
9.      Adjust salt
Serve with rice

Kundapur mutton gravy


Ingredients
Mutton 250 gms
Fennel seeds 1 tsp
Onion 1
Tomato 2
Ginger garlic paste 1 tbsp
Chilli powder 1 tbsp
Cumin powder 1 tsp
Coriander powder 2 tbsp
Curd 3 tbsp
Curry leaf 2 sprigs
Coconut milk ¼ cup
Fresh cream 4 tbsp
Salt and oil as required
Preparation
1.     Grind tomatoes and onion together to a fine paste
2.     In a pan add oil,fennel seeds,curry leaf and onion-tomato paste
3.     Add ginger garlic paste and mutton .saute well
4.     Add chilli powder,cumin powder,coriander powder and curd .. sauté well
5.     Add a cup of water and cook till the mutton is done
6.     Once done add coconut milk and cream
7.     Stir well and turn off the flame
Serve with rice or rotis

Mysore chilli chicken


Ingredients
Chicken ½ kg
All purpose flour 3 tbsp
Cornflour 3 tbsp
Rice flour 3 tbsp
Egg 1
Ginger garlic paste 1 tsp
Chilli powder 1tsp
Coriander powder 1 tsp
Green chilli slit 8
Onion 1
Salt and oil as required
Preparation
1.     In a bowl add corn flour,all purpose flour,rice flour,ginger garlic paste,chilli powder,coriander powder and salt.mix well
2.     Add chicken pieces and egg
3.     Mix well without adding water
4.     Marinate chicken for 15-20 min
5.     In a pan add oil,onion and green chilli.saute once
6.     Add marinated chicken and sauté well
7.     Add 4 tbsp of water and toss well
8.     Cook till chicken is done
Serve with rice or rotis

Bhatkal briyani

This is a very popular kind of briyani among mangloreans.. especially made by navayathi muslims in mangalore region for special occasion. give a try of this.. here is the recipe


Ingredients
For cooking rice
Rice 1 cup
Water 1cup
Cinnamon 1
 Cloves 2
Bay leaf 1
Cook till rice is half done
For briyani masala
Cinnamon 1
Cloves 2
Bay leaf 1
Mint and coriander leaves 1 cup
Onion 1
Ginger garlic paste 2 tsp
Tomato 2
Curd ¼ cup
Chicken 200 gms
Prawns cleaned 100 gms
Crab cooked and flesh separated ¼ cup(cook crab in water for 15 min,allow it to cool and separate the flesh inside)
Fish boneless ¼ kg(cut fish into cubes.Marinate it with salt,turmeric powder and chilli powder and then sauté it in oil till masala coats well with fish)
Coriander powder 2 tsp
Chilli powder 2 tsp
turmeric powder 1/2 tsp
Salt and oil as required
Preparation
1.     In a pressure pan add oil,cinnamon,cloves,bay leaf,mint and coriander leaves.saute well
2.     Add onion,ginger garlic paste and tomato .saute well
3.     Add curd,chicken pieces and sauté well till water oozes out of it dries up
4.     Add prawns and crab.saute well
5.     Add chilli powder,coriander powder,turmeric powder and salt
6.     Once the oil seperates well out of masala add cooked rice and fish pieces,toss well
7.     Close the lid and cook in low medium heat for 10-15 minutes
Serve hot with raita
