Sambal fried noodles


Ingredients
Noodles pack 2
Shallots 5
Garlic 5
Capsicum 1 thinly sliced
Cabbage grated 1 cup
Anchovies (dried)cleaned 15
Egg 1
Soy sauce 1 tsp
Tomato sauce 1 tsp
Dry red chilli paste 2 tbsp
Salt and oil as required
Preparation
1.      Add salt,a tsp of oil to 4 cups of boiling water and add noodles
2.      Turn off the flame and close the lid for 10 min
3.      Drain the water and rinse the noodles in running water
4.      Drain and keep aside
5.      Beat egg with salt
6.      In a pan pour the egg mixture and allow to cook
7.      Once done cut it into thin slices. Keep aside
8.      Hand pound shallots and garlic coarsely
9.      In a pan add oil,pounded shallot-garlic and anchovies.saute well
10.  Add capsicum,cabbage and salt.saute well
11.  Add cooked noodles,chilli paste,soy sauce and tomato sauce.toss well
12.  Add egg and toss once
Serve hot

Quail eggs and anchovies sambal


Ingredients
Boiled and deshelled Quail eggs 24
Anchovies 25
Onion 1
Tomato 1
Dry red chilli paste 2 tbsp
Soy sauce 1 tsp
Oil ¼ cup
Salt as required
Preparation
1.      In a pan add ¾ of oil given above and fry the biled eggs and anchovies till golden brown. Keep aside
2.      Grind onion and tomato together into paste
3.      In the remaining oil add onion tomato paste and salt
4.      Saute till water dries up
5.      Add dry chilli paste and 4 tbsp of water
6.      Once it starts boiling add fried anchovies, fried eggs and soy sauce
7.      Cook till eggs coats well with sambal
Serve with any rice or even plain rice
Here I served with tomato rice and it tastes good too

Vermicelli stir fry (Indo Chinese style)


Ingredients
Vermicelli 2 cups
Anchovies 2 tbsp
Egg 1
Onion chopped 1
Garlic 5 pods
Small onion 4
Chilli sauce 1 tbsp
Tomato sauce 2 tbsp
Soy sauce 2 tbsp
Coriander leaf chopped 2 tbsp
Salt and oil as required
Preparation
1.      In a pan add 4 cups of water and vermicelli
2.      Allow it to cook till water dries up
3.      Hand pound small onion and garlic coarsely
4.      Ina pan add oil, chopped onion, pound paste and little salt. Saute well
5.      Add anchovy and fry it well
6.      Add egg and toss well
7.      Add soya sauce, tomato sauce,chilli sauce and vermicelli to it. Toss well
8.      Adjust salt
9.      Add chopped coriander and toss once
Serve hot

Egg shallots omelette


Ingredients
Egg 1
Shallots (sambar onion) 10 chopped finely
Green chilli 1 chopped finely
Pepper corns 1 tsp crush it coarsely
Salt and oil as required
Preparation
1.      In a pan add little oil, green chilli, shallots and a pinch of salt. Saute well, till it turns glossy
2.      Turn off the flame and allow it to cool
3.      In a bowl add egg and a little salt. Beat well
4.      Once the onion is cooled add to egg and mix well
5.      In a pan add a little oil and pour the egg mixture
6.      Sprinkle pepper
Allow it to cook
Goes well with rasam rice on a rainy day

Spicy podi omelette


Ingredients
Egg 1
Onion chopped 1
Tomato chopped 1
Green chilli 1
Salt and oil as required
To grind
Bengal gram ½ tsp
Dry red chilli 1
Coriander seeds ½ tsp
Dry roast and grind coarsely
Preparation
1.      In a bowl add chopped onion, green chilli, tomato, salt and egg
2.      Beat well
3.      In a pan add the egg mixture
4.      Add oil around the sides
5.      Sprinkle ground powder to it
6.      Cook on both sides
Serve hot

Marthandam country chicken and egg curry


Ingredients
Country chicken 500 gms
Onion 1
Tomato 1
Ginger garlic paste 1 tbsp
Curry leaf 2 sprigs
Boiled Eggs 4
Dry red chilli 2
Fennel seeds ½ tsp
Bay leaf 1
Cinnamon 1
Cloves 2
Coconut grated ¼ cup +fennel seeds ½ tsp( grind together to smooth paste)
Salt and oil as required
For marination 
Turmeric powder ½ tsp
Chilli powder 2 tsp
Ginger garlic paste 1 tsp
Lemon juice 1 tbsp
Marinate chicken with the above items for 1 hour
To grind
Onion 1
Pepper corns 1 tsp
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Dry roast and grind to a smooth paste
Preparation
1.      In a pressure pan add oil, dry red chilli, fennel seeds, bay leaf, cinnamon, cloves, curry leaf, onion and ginger garlic paste. Saute well
2.      Add marinated chicken and salt
3.      Add 1 cup water and pressure cook for 3-4 whistles
4.      Once the pressure settles down add ground paste, tomato and coconut paste
5.      Allow it to boil
6.      Make small pricks on boiled eggs and add eggs to the boiling gravy
7.      Simmer the flame for 3 minutes
8.      Turn off the flame
9.      Keep aside for egg to absorb the masala
Serve with rice

Chapathi stuffed rolls


Ingredients
Chapathi 4
Ghee 2 tsp
Onion chopped 2
Cauliflower florets 10 (clean it and add salt to it. Keep it aside for 10 min.then wash it and boil it in water for 10 minutes. Strain the water and keep aside)
Egg 2
Tomato chopped 1
Ginger garlic paste 1 tsp
Turmeric powder 1/2tsp
Chilli powder 1 tsp
Coriander leaves chopped 2 tbsp
Salt and oil as required
Preparation
1.      In a pan add ghee,onion,tomato,ginger garlic paste, cauliflower and salt
2.      Sauté well and add turmeric powder, chilli powder and coriander leaves. Toss well
3.      Add eggs and sauté well.
4.      Make chapathis and stuff this mix while it is hot
5.      Fold it well on both ends

Egg noodles italiana


Ingredients
Plain noodles 1 pack ( soak in hot boiling water for 10 minutes and drain the water. Wash in running cold water immediately after draining)
Egg 2
Cabbage chopped 1 cup
Onion chopped 1
Garlic chopped 1 tbsp
Green chilli 2
Italian herbs 2 tsp
Salt and oil as required
Preparation
1.      In a pan add oil, garlic, onion , green chilli and saute well
2.      Add egg and scramble it well
3.      Add cabbage, salt and 4 tbsp of water
4.      Cook till water dries up
5.      Add cooked noodles , italian herbs and toss well
Serve hot

Ingredients
Egg 2
Onion chopped 1
Tomato chopped ½
Green chilli chopped 1
Italian herbs 1 tsp
Chilli flakes 1 tsp
Oil and salt as required
Preparation
1.      In a bowl add onion, tomato, green chilli, eggs, Italian herbs and salt. Beat well
2.      In a pan add little oil and pour the egg mixture
3.      Sprinkle chilli flakes on it
4.      Cook well on both sides
Serve hot

Simple egg fry( muttai poriyal)


Ingredients
Egg 2
Onion chopped 1
Green chilli chopped 2
Salt and oil as required
Preparation
1.      In a bowl add egg, onion, green chilli and salt
2.      In a tava add the egg mix and add a little oil to it
3.      Scramble it well
Serve with rotis or rice
