Spicy rice (Kari sooru)


Ingredients
Shark fish 200 gms
Prawns 200 gms
Crab meat 200 gms
Rice 1 ½ cup
Onion 1
Ginger garlic paste 2 tsp
Tomato 2
Curry leaf 1 sprig
Coriander leaf chopped 2 tbsp
Cinnamon 1
Cloves 2
Bay leaf 1
Chilli powder 2 tsp
Coriander powder 1 tsp
Turmeric powder ½ tsp
Pepper powder 1 tsp
Salt and oil as required
Preparation
1.      In a pressure cooker add oil,cinnamon,cloves,bay leaf and onions.saute well
2.      Add curry leaf,coriander leaf and ginger garlic paste.saute well
3.      Add tomatoes and cook till it blends
4.      Add shark,prawns and crab meat one by one.saute once
5.      Add turmeric powder,chilli powder, coriander powder and salt
6.      Add rice and mix well
7.      Add 3 cups of water and cook for 3 whistles
8.      Once the pressure settles down add pepper powder
Serve with raita

VILLAGE STYLE CRAB ROAST (GRAMATHU NANDU VARUVAL)


Ingredients
Crab 2
Garlic 10
Onion 1
Dry red chilli 1
Cinnamon 1
Cloves 2
Mustard seeds ½ tsp
Ginger garlic paste 1 tsp
Tomato ½
Chilli powder ½ tsp
Pepper powder 1 ½ tsp
Cumin seeds-fennel seeds coarsely ground 1 tsp
Oil and salt as required
Preparation
1.      Clean and wash crab. Keep aside
2.      In a pan add oil, mustard seeds, cloves, cinnamon, dry red chilli, garlic and onion. Sauté well
3.      Add ginger garlic paste, tomato and crab
4.      Sauté well and add chilli powder, water
5.      Allow it to cook till it dries up
6.      Add ground fennel-cumin powder and pepper powder. Toss well
Serve with rice

Crab dry curry(nandu thokku)


Ingredients
Crab 250 gms
Onion 2
Tomato 3
Green chilli chopped 4
Curry leaf 2 sprigs
Ginger garlic paste 1 tsp
Turmeric powder ½ tsp
Chilli powder 1 tsp
Coriander powder 2 tsp
Roasted cumin pepper powder 2 tsp(dry roast cumin seeds and pepper corns.grind it coarsely)
Salt and oil as required
Preparation
1.      In a pan add oil,onion,green chilli,ginger garlic paste and curry leaf
2.      Add turmeric powder,chilli powder,coriander powder and tomatoes.cook till it blends
3.      Add crab ,salt and water
4.      Cook till it is done and dries up well
5.      Finally add roasted powder and toss well
Serve with rice

Madurai Crab rasam (Nandu rasam)


Ingredients
Crab 2
Onion 1
Tomato 2
Cloves 2
By leaf 1
Oil and salt as required
To grind
Coriander seeds 2 tbsp
Dry red chilli 2
Cumin seeds 1 tsp
Pepper corns 1 tbsp
Dry roast and grind to a coarse powder
Preparation
1.      In a pan add oil , cloves, bay leaf and onion. Sauté well
2.      Add tomatoes and cook till it is mushy
3.      Add crab, salt, ground powder and 4 cups of water
4.      Cook for 10-15 minutes
Serve hot

Crab green fry


Ingredients
Crab 500 gms
Fennel seeds 1 tsp
Curry leaf 2 sprigs
Oil and salt as required
To grind
Onion 1
Tomato 1
Ginger 1 inch
Garlic 10
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Pepper corns 1 tsp
Coriander leaves chopped ¼ cup
Mint leaves chopped ¼ cup
Grind to a smooth paste
For marination
Green chilli slit 3
Turmeric powder ½ tsp
Chilli powder 1 tsp
Coriander powder 2 tsp
Marinate crab with above powder, salt  and ground paste for 2-3 hours
Preparation
1.      In a pan add oil,fennel seeds and curry leaf
2.      Add marinated prawns and cook for 10 minutes
3.      Allow it to dries up well
Goes well with rice

Parangipettai crab curry


Ingredients
crab 5
onion chopped 2
ginger garlic paste 2 tsp
green chilli 3
tomato chopped 2
turmeric powder ½ tsp
chilli powder  1 tsp
pepper powder 2tsp
coconut paste ¼ cup
mustard seeds ½ tsp
urad dal ½ tsp
oil and salt as required
preparation
1.In a pan add oil,mustard seeds,urad dal,onion and ginger garlic paste.saute well
2.Add tomatoes,green chilli and crab.saute it well
3.Add turmeric powder,chilli powder,pepper powder ,salt and water
4.Once it starts boiling add coconut paste
5.Cook till done
Serve with rice

Bhatkal briyani

This is a very popular kind of briyani among mangloreans.. especially made by navayathi muslims in mangalore region for special occasion. give a try of this.. here is the recipe


Ingredients
For cooking rice
Rice 1 cup
Water 1cup
Cinnamon 1
 Cloves 2
Bay leaf 1
Cook till rice is half done
For briyani masala
Cinnamon 1
Cloves 2
Bay leaf 1
Mint and coriander leaves 1 cup
Onion 1
Ginger garlic paste 2 tsp
Tomato 2
Curd ¼ cup
Chicken 200 gms
Prawns cleaned 100 gms
Crab cooked and flesh separated ¼ cup(cook crab in water for 15 min,allow it to cool and separate the flesh inside)
Fish boneless ¼ kg(cut fish into cubes.Marinate it with salt,turmeric powder and chilli powder and then sauté it in oil till masala coats well with fish)
Coriander powder 2 tsp
Chilli powder 2 tsp
turmeric powder 1/2 tsp
Salt and oil as required
Preparation
1.     In a pressure pan add oil,cinnamon,cloves,bay leaf,mint and coriander leaves.saute well
2.     Add onion,ginger garlic paste and tomato .saute well
3.     Add curd,chicken pieces and sauté well till water oozes out of it dries up
4.     Add prawns and crab.saute well
5.     Add chilli powder,coriander powder,turmeric powder and salt
6.     Once the oil seperates well out of masala add cooked rice and fish pieces,toss well
7.     Close the lid and cook in low medium heat for 10-15 minutes
Serve hot with raita

Crab briyani (nandu briyani)


Ingredients
Cooked basmati rice 200 Gms
Crab 4
Onion chopped 1 cup
Tomato 2
Green chilli 4
Peppercorns 1 tsp
Coriander seeds 1 tsp
Turmeric powder ¼ tsp
Cottage cheese (paneer) 50 Gms
Mint coriander leaves 1 tbsp
Oil and salt as required
Preparation
1.      In a pan add oil, pepper corns, coriander seeds, green chillies, onion and tomatoes. sauté it and blend it to a paste
2.      Fry paneer in oil and keep aside
3.      In a pan add oil, ground paste, coriander mint leaves, cook crab meat pieces and salt
4.      Cook till the gravy thickens
5.      Mix cooked rice, grated fried paneer to the gravy and cook in low medium heat for 10 min with lid closed
Serve hot with raita

Karaikudi crab pepper roast


Ingredients
Crab 500gms
Garlic 3 no
Ginger 1 inch
Pepper corns 3 tsp
Dry red chilli 3
Mustard seeds ½ tsp
Fennel seeds ½ tsp
Turmeric powder ½ tsp
Lemon ½ no
Oil and salt as required
Preparations
1.      Clean the crab and keep aside
2.      Make a fine paste of garlic,ginger,dry red chillis,pepper corns
3.      In a pan add oil, mustard seeds, fennel seeds, ground paste and the crab pieces. Toss it well till it oozes out water in it
4.      Finally add turmeric powder and salt .roast it till the crab pieces gets coated well with masalas
5.      Turn off the flame and add lemon juice.
            Serve with rice

Chettinad Crab Rasam

Ingredients
Crab ¼ kg
Onion 1
Tomato 2
Garlic 6 pods
Peppercorns ¼ tsp
Fennel seeds ¼ tsp
Cumin seeds ¼ tsp
Turmeric powder ¼ tsp
Salt and oil as required
Preparations
1.      Clean the crab pieces
2.      sauté the chopped onions in oil and grind it to paste
3.      separately  sauté the chopped tomatoes in oil and grind it to a separate paste
4.      In a pan add oil, pepper corns, fennel seeds, cumin seeds and the crab pieces.fry till it oozes out the water in it
5.      Then add the onion paste, tomato paste, crushed garlic, turmeric powder and salt. Mix well
6.      Add required water and allow it to boil
   The essence of the crab gives the rasam an excellent taste. Garnish with coriander leaves     and Serve with rice.
