Pan fried chilli chicken (healthier version) less oil


Ingredients
Chicken 500 gms (preferably boneless)
Onion diced 2
Capsicum diced 1
Garlic chopped 10
Ginger garlic paste 1 tbsp
Egg 1
Green chilli sauce 2 tbsp
Soy sauce 2 tbsp
Vinegar 1 tsp
cornflour ¼ cup
Pepper powder  2 tbsp
Green chilli slit 4-6
Salt as required
Olive oil 4 tbsp
Preparation
1.      Marinate chicken pieces with ginger garlic paste,half of chilli sauce,soy sauce, pepper powder, salt, corn flour and beaten egg  for an hour in refrigerator
2.      In a pan add 3 tbsp of oil, to it add marinated chicken and toss such that chicken gets coated well with cornflour mixture
3.      Allow it to cook brown
4.      Keep aside
5.      In a pan add 1 tbsp of oil, garlic, onion , capsicum and green chilli
6.      Toss till onion turn transparent
7.      Add fried chicken, toss once
8.      Add remaining sauces, vinegar,salt and pepper
9.       Toss well
Serve hot

Prawn fried rice


Ingredients
Basmati rice 2 ½ cups
Onion chopped 1
Garlic 5 pods
Onion to grind 1
Anchovies 2 tbsp
Prawns 500 gms
Chilli sauce 1 tbsp
Tomato sauce 3 tbsp
Soya sauce 2 tbsp
Coriander leaves chopped 2 tbsp
Pepper powder 2 tsp
Salt and oil as required
Preparation
For rice
1.      Wash and soak rice in 3 3/4 cups of water for 20 min
2.      Strain water and keep water and rice separately
3.      In a pressure cooker add a tsp of oil and strained rice
4.      Toss well till the rice turn glossy
5.      Add rice soaked water to it
6.      Cook for 10 minutes under pressure in low flame
7.      Once the pressure settles down fluff rice with a fork
8.      Once it cools down keep it in refrigerator freezer for 10 minutes
9.      These makes the rice non sticky
10.  Keep aside
For fried rice
1.      Hand pound onion and garlic coarsely
2.      In a pan add oil, chopped onion, pound paste and little salt. Saute well
3.      Add anchovy and fry it well
4.      Add prawns and toss well
5.      Cook till prawns turns pink and water oozes out of it dries up
6.      Add soya sauce, tomato sauce,chilli sauce and cooked rice to it. Toss well
7.      Adjust salt and add pepper powder
8.      Add chopped coriander and toss once
Serve hot

Garlic prawns


Ingredients
Prawns 500 gms
Dry red chilli 4
Garlic 10 pods chopped finely
Dry chilli flakes 1 tbsp
Sesame oil 1 tsp
Turmeric powder ½ tsp
Coriander leaves chopped 2 tbsp
Salt as required
Preparation
1.      Deshell and devein prawns
2.      Add turmeric powder and wash well
3.      In a pan add oil, garlic, dry red chilli ,prawns and salt
4.      Add chilli flakes and allow it to cook
5.      Once done turn off the flame and add coriander leaves. Toss once
Serve hot as appetizer

Simple chilli chicken


Ingredients
Chicken 500 gm
Corn flour 2 tbsp
All purpose flour 1 tbsp
Capsicum diced 2
Onion diced 1
Green chilli slit 3-4
Soy sauce 2 tsp
Pepper powder  1 ½ tbsp
Salt and oil as required
Preparation
1.      In a bowl add corn flour, all purpose flour, pepper powder and salt. Mix well
2.      Add cleaned chicken pieces and  rub well
3.      In a pan add oil, onion, green chilli and capsicum. Saute well
4.      Add mixed chicken chicken, soy sauce, pepper  and toss once
5.      Close lid and allow to cook
6.      Stir occasionally
7.      Once done adjust salt and pepper accordingly
Serve hot

Vermicelli stir fry (Indo Chinese style)


Ingredients
Vermicelli 2 cups
Anchovies 2 tbsp
Egg 1
Onion chopped 1
Garlic 5 pods
Small onion 4
Chilli sauce 1 tbsp
Tomato sauce 2 tbsp
Soy sauce 2 tbsp
Coriander leaf chopped 2 tbsp
Salt and oil as required
Preparation
1.      In a pan add 4 cups of water and vermicelli
2.      Allow it to cook till water dries up
3.      Hand pound small onion and garlic coarsely
4.      Ina pan add oil, chopped onion, pound paste and little salt. Saute well
5.      Add anchovy and fry it well
6.      Add egg and toss well
7.      Add soya sauce, tomato sauce,chilli sauce and vermicelli to it. Toss well
8.      Adjust salt
9.      Add chopped coriander and toss once
Serve hot

Fried black pepper chicken


Ingredients
Chicken 300 gms
For marination
Chicken masala 2 tsp
Curd 1 tbsp
Vinegar 1 tsp
Marinate chicken with chicken masala, curd, vinegar for an hour
Deep fry in oil and keep aside
For masala
Small onion chopped 25
Ginger paste 1 tsp
Garlic chopped 1 tbsp
Curry leaf 2 sprigs
Sweet chilli sauce 1 tsp
Soy sauce 1 tsp
Vinegar 1 tsp
Pepper powder 2 tsp
Cumin powder ½ tsp
Salt and oil as required
Preparation
1.      In a pan add oil, small onion, ginger, garlic and curry leaf. Saute well
2.      Add chilli sauce, soy sauce, vinegar and fried chicken toss well
3.      Add salt, pepper and cumin powder. Toss well
Serve hot

Ginger chicken


Ingredients
Chicken 250 gms
Onion 1
Green chilli 4
Coriander leaf 4 tbsp
Curry leaf 2 tbsp
Corn flour 1 tbsp
Vinegar 1 tsp
Ginger sliced 3 tbsp
Ginger garlic paste 1 tsp
Pepper powder 1 tsp
Salt and oil as required
Preparation
1.      Marinate chicken pieces with corn flour,vinegar and salt for 20 minutes
2.      Grind coriander leaf,curry leaf,onion and green chillies to a fine paste
3.      In a pan add oil,marinated chicken,sliced ginger and ginger garlic paste.saute well
4.      Add ground paste and cook with lid closed in simmer flame till done
5.      Once done add pepper powder and toss well
Serve hot

Saucy Fried chicken balls


Ingredients
Boneless chicken 250 gms
Ginger garlic paste 1 tbsp
Garam masala 2 tsp
Onion 1
Tomato ketchup 2 tbsp
Lemon juice 1 tsp
Salt and oil as required
Preparation
1.      Grind chicken with ginger garlic paste, garam masala and salt
2.      Make balls or (any shape  u like)out of it and deep fry it in oil
3.      In a pan add oil,onion,tomato ketchup and salt
4.      Add fried chicken balls and toss once
5.      Turn off the flame and add lemon juice
Serve hot

Chicken fried rice


Ingredients
For chicken
Chicken 100gms boneless (cut it into small cubes)
Corn flour 1 tsp
Egg white 1 tsp
Pepper powder 1 tsp
Mix chicken with above items and salt
Deep fry it in oil and keep aside
For rice
Basmati rice 1 ¼ cup
Water 2 cups
Pressure cook rice for 2 whistles
Allow it to cool down and refrigerate it for 10 min in freezer
For frying
Egg 2 (beat eggs with pepper powder and salt. Scramble it and keep aside)
Onion 1
Cabbage grated 1 cup
Garlic chopped 2 tsp
Pepper powder and salt as per your taste
Soy sauce 1 tsp
Oil 2 tbsp
Preparation
1.      In a pan add oil, garlic, onion and cabbage. Sauté well
2.      Add scrambled egg, fried chicken, cooked rice, soy sauce and pepper powder. Toss well
Serve hot

Szechuan egg noodles


Ingredients
Egg 2
Noodles 1 pack
Vegetables 2 cup (carrot grated, cabbage finely chopped)
Onion 1
Garlic chopped 1 tbsp
Green chilli 2
Szechuan sauce 1  tbsp
Soy sauce 1 tsp
Pepper powder and salt as per taste
Oil 2 tbsp
Preparation
1.      Add salt,a tsp of oil to 4 cups of boiling water and add noodles
2.      Turn off the flame and close the lid for 10 min
3.      Drain the water and rinse the noodles in running water
4.      Drain and keep aside
5.      In a pan add a tsp of oil,egg,pepper powder and salt.scramble it and keep aside
6.      In a pan add remaining oil, garlic, onion and green chilli.saute well
7.      Add Szechuan sauce and sauté once
8.      Add the vegetables and salt
9.      Sauté well without adding water
10.  Once done add scrambled egg,noodles,pepper powder and soy sauce
11.  Toss well
12.  Check for salt
Serve hot
