South indian style chicken fry


Ingredients
Chicken ¼ kg
Onion 1 chopped
Coriander powder 3 tsp
Coriander 50 gms roast and grind coarsely
Dry red chilli 10
Tamarind extract 1 tbsp
Ginger garlic paste 2 tsp
Curry leaf 2 sprigs
Salt and oil as required

Preparation
1.      In a pan add oil, onion, curry leaf,dry red chilli and ginger garlic paste .saute well
2.      Add chicken ,ground coriander,salt and coriander powder
3.      Allow it cook
4.      Once done,Add tamarind extract . Toss well
 Serve with rice

Andhra style chicken gravy (kodi kura)


Ingredients
Chicken ½ kg
For marination
Ginger garlic paste 1 tsp
Vinegar 1 tbsp
Curd 2 tbsp
Turmeric powder 1 tsp
Marinate chicken pieces with salt and above ingredients for ½ hour
To grind
Pepper corns ½ tbsp
Fennel seeds 1 tbsp
Dry red chilli 6
Cumin 1 tsp
Cinnamon 1 inch
Cloves 6
Poppy seeds 1 tbsp
Dry roast and grind the above ingredients to powder
For gravy
Onion 1
Ginger chopped 1 tsp
Garlic 1 tsp
Tomato puree 1 cup
Salt and oil as required
Preparation
1.      In a pan add oil, onion,curry leaf and ginger garlic paste. Saute well
2.      Add tomato puree and ground powder. Toss well
3.      Add chicken, salt and saute till water oozes out of it dries
4.      Add a cup of water and allow to cook till chicken is done
Serve with rotis or pulao

Guntur chicken fry (kodi vepudu)


Ingredients
Chicken 500 Gms
Onion chopped 1
Green chilli 6
Curry leaf 2 sprigs
Salt and oil as required
For marination
All purpose flour 2 tbsp
Corn flour 1 tbsp
Rice flour 2 tbsp
Egg 1
Turmeric powder 1 tsp
Ginger garlic paste 1 tbsp
Chilli paste 3 tbsp (soak dry red chilli in vinegar, remove seeds and grind it to a smooth paste)
Marinate chicken with above ingredients and salt for 30 min
Deep fry it in oil and keep aside
Preparation
1.      In a pan add oil, curry leaf, onion and green chilli. sauté well
2.      Add fried chicken and salt
3.      Toss well
Serve hot with rice or rotis

Beemavaram chicken fry


Ingredients
Chicken ½ kg
Small onion 15
Cinnamon 1
Cloves 2
Cardamom 2
Fennel seeds 1 tsp
Garam masala 1 tsp
Corn flour 2 tbsp
Salt and oil as required
For marination
Curd ¼ cup
Turmeric powder ½ tsp
Chilli powder 1 tbsp
Coriander powder 1 tsp
salt
Marinate chicken for ½ hr
Preparation
1.     To the marinated chicken add corn flour and mix well
2.     Deep fry the chicken pieces and keep aside
3.     In a pan add oil,cinnamon,cloves,cardamom,fennel seeds and small onion.toss well
4.     Grind it to a fine paste and keep aside
5.     In a pan add oil,ground paste,garam masala and fried chicken pieces.toss well
Serve hot

Green chilli chicken fry(andhra style)

Ingredients
Chicken 500 gms
Onion big 1
Garlic 10 pods chopped
Garlic chopped 1 inch
Green chillies 8 chopped
Salt and oil as required
To grind
Cinnamon 2
Cloves 4
Coriander seeds 1 tbsp
Fenugreek seeds ¼ tsp
Cumin seeds ½ tsp
Fennel seeds ½ tsp
Grind together to a coarse powder
Preparation
1.      In a pan add oil and onions.saute well
2.      Add chicken and green chilli .toss well till the water oozes out of chicken dries up
3.      Add chopped ginger and garlic.toss well
4.      Once the chicken is done add salt and ground powder.toss well
Serve hot with rice
