Chettinad spicy mutton briyani

Basmati rice 1 cup
Mutton ¼ kg
Small onion 100 Gms
Garlic 10 pods
Ginger 1 inch
Poppy seeds 2 tsp
Cashew 5
Coriander powder 1 tsp
Coconut milk 4 cups
Coriander and mint leaves 1 cup
Green chilli 6
Cinnamon 1
Cardamom 4
Cloves 4
Salt and oil as required
1.      Make a fine paste of small onions,pudina,3 green chillies without adding water
2.      Marinate the cleaned mutton pieces with garlic-poppy seeds paste
3.      Then pressure cook the marinated mutton with salt and coriander powder in a cup of water for 3 whistles
4.      Roast cardamom,cloves,cashew  in oil and powder it
5.      In a pressure cooker add oil,cinnamon,chopped onions, tomato and ground onion paste .sauté it
6.      Add washed rice and fry it for 2-3 minutes
7.      Add turmeric powder, salt, coconut milk and a cup of water
8.      When it starts boiling add the cooked mutton pieces and cook for 2 whistles
9.      Once the pressure settles down add the roasted powder, coriander-mint leaves and keep the cooker in low flame for 15 minutes with lid close.
Serve hot with raita
