Chettinad Egg Omelette Curry (Muttai Kulambu)

Egg 4
Potato 1
Fenugreek seeds ½ tsp
Fennel seeds ½ tsp
Onion chopped 1 cup
Tomato 1
Garlic 1 no
Curry powder 1 tbsp
Coriander powder 1 tsp
Tamarinds extract 2 tbsp
Curry leaves 1 sprig
Oil and salt as required
1.      Beat egg and pour egg in a pan making separate omelette of each egg. Keep aside
2.      In a pan add oil, fennel seeds and fenugreek seeds
3.      Add onions,tomatoes,garlic pods, curry leaves and chopped potato
4.      Add curry powder, coriander powder, salt  and required water
5.      Cook till potato is done
6.      Add tamarind extract and add the egg omelette.
7.      Allow it to boil
Serve with rice
