Boiled egg masala fry (muttai varuval)

Boiled eggs 2
Onion 1
Tomato 1
Ginger ½ inch chopped finely
Garlic 5 pods chopped
Green chilli chopped 1
Chilli powder 1 tsp
Coriander powder 1 tsp
Turmeric powder ½ tsp
Cumin seeds 1 tsp
Coriander leaves chopped 1 tbsp
Curry leaf 2 sprigs
Salt and oil as required
1.     Boil the eggs and deshell it
2.     Make vertical cut ,remove the yolk and keep aside
3.     Cut the white portion into four
4.     To the white part add chilli powder,turmericpowder,coriander powder ,salt and a tbsp of oil
5.     Marinate for 15 min
6.     In a pan add oil and shallow fry the marinate white part carefully without breaking it.keep aside
7.     In a pan add oil,cumin seeds,onion,green chilli,ginger,garlic,curry leaf and tomatoes
8.     Cook till tomatoes become mushy.add little water about 4 tbsp.
9.     Allow it to boil
10.  To it add fried egg pieces and mix well’
11.  Finally add yolk and coriander leaves
12.  Toss once
Serve with rice,rotis or pulao
