Madurai Chicken Salna

Madurai, the temple city is very famous for briyani and parottas.in Madurai u can have a wide variety of parottas namely veechu parottas ,mutta parottas and so on.for any of these parottas the best accompliment side dish is 
the salna.this recipe will surely get u the taste of salna u usually have in hotels of Madurai.





Ingredients
Chicken                                            ½ kg
Bay leaves                                        1
Cinnamon                                         1
Cloves                                              2
Cardamom                                       1
Onion                                               1
Tomato                                            2
Turmeric powder                             ¼ tsp
Oil and Salt as required
U need to grind two separate masalas
For masala 1:
Onion                                              1
Garlic                                              6 pods
Garlic                                              1 inch
 Curry leaves                                   1 sting
Pepper corns                                  1 tbsp
Coriander seeds                             1 tbsp
Cumin seeds                                   1 tbsp
Dry red chillies                                6
For masala 2:
Coconut                                        ¼ cup
Fennel seeds                                 1 tbsp
Preparations
1. In a pan add oil chopped onions, tomatoes and sauté them well
2. Add the ground masala 1 and fry till the raw smell vanishes
3. Now add turmeric powder, salt and the chicken pieces and sauté them till chicken oozes out the water in it.
4. Then add 2 cups of water and cook till the chicken tenders
5. Once it is cooked add the ground masala 2 and allow it to cook for another 5 min (don’t boil it)
6. Once the oil starts separating out turn off the heat
7. In another pan add oil, cardamom, cinnamon, cloves and bay leaves. Add this to the chicken gravy
Garnish it with coriander leaves and serve with parottas. U can also serve this with idly, dosa, rotis and briyani
